Overnight Oats and Fruit Recipe

Do you like something that is quick and simple to make for breakfast? Would you like to prepare your breakfast the night before? If so, why not give this Overnight Oats and Fruit Recipe a go. I tend to prepare the Overnight Oats and Fruit Recipe whilst making tea, it literally takes 5 minutes, so doesn't feel like too much extra work and produces a delicious hassle free breakfast the following day. This recipe is suitable for one adult but quantities could be increased to feed more people. What do I need to make the recipe? A jar with lid 3 heaped tablespoons of porridge oats A handful of chopped fruit of your choice (pictured: 2 chopped strawberries and a kiwi), 2 tablespoons of natural or Greek yoghurt A squirt of maple syrup or teaspoon of honey. (Honey is no...

Oatmeal Pancake Recipe

We LOVE Pancakes in our household and eat them pretty much every week, especially as a weekend treat. We generally go for a Canadian style pancake. Berries, bananas and maple syrup are normally my eldest preference of topping and I enjoy maple syrup and bacon. I have found that during the Covid-19 pandemic we ran out of white flour and maple syrup and needed to get innovative with our recipe, so created our Oatmeal Pancake Recipe. I though the texture was slightly more corse verses our white flour based recipe but they were still very tasty. Pancake Ingredients: 200g Porridge Oats (the oats were used to make Oatmeal) 2 Eggs 1/4 Pint Milk These pancakes were topped with a handful of frozen raspberries (I would have used fresh if we had them in) and a drizzle of golden syr...
Homemade Butter Bean Dip

Homemade Butter Bean Dip

We regularly add Butter Beans to our stews and soups but I decided to have a go at making a Homemade Butter Bean Dip for lunchtime, we enjoy eating hummus but we didn’t have any in the fridge and also don’t have any chickpeas in the cupboard, so I thought I would give it a go and was impressed with the result, especially as everyone enjoyed eating it! We ate the dip with cucumber sticks and crisps but it would also go nicely with carrots, peppers, pita bread, bread sticks or flat breads. Check out Berkshire Mummies Lockdown Pizza Flatbread recipe which explains how to make flatbreads.  The Homemade Butter Bean Dip was straightforward to make and took about 15 minutes. I simply added all the ingredients to our NutriBullet and whizzed it up. To make the recipe you will need:

Making Lockdown Flatbread Pizza

During lockdown I am finding we are trying to waste less food, be more creative and are finding time to do some more cooking from scratch. I have always loved to cook and it's been great to be able to do more with my eldest during this time at home. We had a go at making Lockdown Flatbread Pizza for lunch one day as we had some tomatoes and ham to use up. Ingredients You will need the following ingredients for the Lockdown Flatbread Pizza bases: 200g of plain flour 5g of flour (for work surface when rolling flatbread bases)90ml of luke warm water 2 tablespoons of sunflower oil To add more flavour to your flatbread you could add a pinch of black pepper, or a handful of chopped parsley or coriander. This recipe made 4 flatbreads approx 15cm diameter, so would recommending ...

AD – Review // Baking Agent, Baking Kits

A team from Reading called Baking Agent got in touch to see if they could send me some of their Baking Kits to help lend a hand during the summer holidays. They kindly sent me three boxes; The Cookie Dough Baking Kit, The Vanilla Flavour Muffins Baking Kit and The Afternoon Tea Baking Kit. It was great to have the baking kits in the cupboard as a little holiday treat and during the holidays we cooked the cookies and the vanilla muffins. My little one helped me cook both The Cookie Dough Baking Kit and The Vanilla Flavour Muffin Baking Kit. We spent two lovely afternoons together, making memories, baking. The Cookie Dough Baking Kit was a hit with my little one as it came with a teddy bear shaped cutter as well as icing and chocolate chips for decorating. We also enjoyed baking ...

AD – Review // Little Cooks Co, Easter Box

During the Easter holidays the Little Cooks Co kindly sent their Easter box for me to try out and review with the help of my little one. There was much excitement when we arrived home one day to find the Easter Little Cooks Co box, which had fitted perfectly through our letterbox, ready for us to try out during the Easter holidays. Upon opening the box we found packets of labelled dry ingredients (a selection is shown in the above photo), three recipe cards including an evening meal suggestion and a kit for making an Easter basket. The recipe cards were for chocolate cookies, homemade chocolate and homemade fish fingers. All the dry ingredients in the box were for making the chocolate cookies and chocolate (very apt for Easter!) and the recipe card for the fish fingers was to i...
