We LOVE Pancakes in our household and eat them pretty much every week, especially as a weekend treat. We generally go for a Canadian style pancake. Berries, bananas and maple syrup are normally my eldest preference of topping and I enjoy maple syrup and bacon. I have found that during the Covid-19 pandemic we ran out of white flour and maple syrup and needed to get innovative with our recipe, so created our Oatmeal Pancake Recipe. Here is recipes for a quick lunch or light super; Asparagus and Baked Eggs. We eat it with slices of french bread and although a simple dish it’s delicious. My eldest isn’t keen on asparagus as it’s quite an acquired taste, however I just serve baked egg and bread as an alternative - I don’t mind as I love fresh asparagus! Homemade Butter Bean Dip

We regularly add Butter Beans to our stews and soups but I decided to have a go at making a Homemade Butter Bean Dip for lunchtime, we enjoy eating hummus but we didn’t have any in the fridge and also don’t have any chickpeas in the cupboard, so I thought I would give it a go and was impressed with the result, especially as everyone enjoyed eating it! We ate the dip with cucumber sticks and crisps but it would also go nicely with carrots, peppers, pita bread, bread sticks or flat breads. Making Lockdown Flatbread Pizza

During lockdown I am finding we are trying to waste less food, be more creative and are finding time to do some more cooking from scratch. I have always loved to cook and it's been great to be able to do more with my eldest during this time at home. We had a go at making Lockdown Flatbread Pizza for lunch one day as we had some tomatoes and ham to use up.
