During lockdown I am finding we are trying to waste less food, be more creative and are finding time to do some more cooking from scratch. I have always loved to cook and it's been great to be able to do more with my eldest during this time at home. We had a go at making Lockdown Flatbread Pizza for lunch one day as we had some tomatoes and ham to use up. Ingredients You will need the following ingredients for the Lockdown Flatbread Pizza bases: 200g of plain flour 5g of flour (for work surface when rolling flatbread bases)90ml of luke warm water 2 tablespoons of sunflower oil To add more flavour to your flatbread you could add a pinch of black pepper, or a handful of chopped parsley or coriander. Growing sunflowers to #plantsomesunshine

Are you growing sunflowers this spring and summer? We have planted some sunflower seeds and they are now growing on a window sill. This means they can be watered easily, whilst getting plenty of sunlight. We will move the flowers to the garden as soon as they are big enough to plant outside. Every year we plant sunflowers, alongside planting our vegetable patch as it always brings us such joy. We love the fact that the sunflowers look like giant sunshines, attract the bees and give the birds some seeds to eat in the autumn. We also love all the different varieties of sunflowers we grow but find the giant ones most fun to grow. This year during the global pandemic of Covid-19 we believe our sunflowers will really give us hope - something to watch grow and nurture throughout the war...

I find that our actual days in 'lockdown' seem to be going quite quickly on a day by day basis - although they seem long on a week by week basis. The game appealed as there is a chance to challenge yourself in ways that you might not necessarily do in everyday life. The game tests your understanding of your confidence levels verses your actual competence to achieve the set challenge. Who can play Beat That! The game is aimed at 11+ year olds. We don’t have children this age so played the games as a ‘date night’ whilst the little ones were in bed. A team from Reading called Baking Agent got in touch to see if they could send me some of their Baking Kits to help lend a hand during the summer holidays. They kindly sent me three boxes; The Cookie Dough Baking Kit, The Vanilla Flavour Muffins Baking Kit and The Afternoon Tea Baking Kit. It was great to have the baking kits in the cupboard as a little holiday treat and during the holidays we cooked the cookies and the vanilla muffins. My little one helped me cook both The Cookie Dough Baking Kit and The Vanilla Flavour Muffin Baking Kit. We spent two lovely afternoons together, making memories, baking. During the Easter holidays the Little Cooks Co kindly sent their Easter box for me to try out and review with the help of my little one. There was much excitement when we arrived home one day to find the Easter Little Cooks Co box, which had fitted perfectly through our letterbox, ready for us to try out during the Easter holidays. Upon opening the box we found packets of labelled dry ingredients (a selection is shown in the above photo), three recipe cards including an evening meal suggestion and a kit for making an Easter basket.
